Mutton Kofta Biryani For Bakrid

People celebrate Bakrid with pomp and vigour, and every Muslim brothers and sisters from all around the world celebrate it with their family and friends.
And a festival is equal to special cuisine. Mutton kofta biryani is one of the mouth-watering delicacies that you can have on the occasion of Bakrid.

Serves - 6
Preparation Time - 60 minutes
Cooking Time - 2 hours
Ingredients
For Rice Basmati Rice - 4 cups
Caraway Seeds - ½ tsp
Whole Garam Masala:
Pepper corns - 7
Cloves - few
Green Cardamom - 5
Shah Jeera - 1 tsp
Cinnamon Stick - 1 inch
Saffron - a pinch, soaked in milk
Salt to taste
For Kofta
Minced Mutton - 500 g
Onion - 1 (paste)
Garam Masala Powder - 1 tsp
Salt according to taste
Poppy Seeds - 1 tsp (finely ground)
Ginger Paste - 1 tbsp
Garlic Paste - 1 tbsp
Fresh Cream - 1 tbsp
Red Chilli Powder - 1 tsp
Grated Coconut - 1 tsp
Coriander Leaves - 1 cup (finely chopped)
Gram Flour (besan) - 1 tbsp
Nutmeg Powder - ½ tsp
Bread - 1 slice (soaked in milk)
For Curry Oil - ½ a cup
Green Chillies - 2 (chopped)
Onion - 1 (chopped)
Tomatoes - 2 (pureed)
Ginger Paste - 1 tbsp
Garlic Paste - 1 tbsp
Cumin Seeds - ½ tsp
Turmeric Powder - ¼th tsp
Yogurt - 3 tbsp
Garam Masala - ½ tsp
Red Chilli Powder - 2 tsp
Salt - as per taste
Kewra Water - 1 tbsp
Mint and Coriander Leaves - 1 cup (chopped)
Yellow Food Colour - a pinch
Nutmeg Powder - ¼th tsp
Mace - ¼th tsp (ground)
Green Cardamom Powder - ¼th tsp
Procedure
For Rice
1. Wash rice well for 3-4 times and keep it in a bowl.
2. Heat water in a deep-bottomed pot.
3. When water starts boiling, add the whole garam masala.
4. Add salt according to taste into the rice and add it to the water to be cooked.
5. When the rice is cooked by ¾th, strain the water and keep rice in a separate bowl.
For Kofta
1. Take a grinder and grind all ingredients together.
2. If you can't mix all at one go, divide the ingredients into 2-3 parts and do it.
3. When the parts are ground, add them altogether in the grinder and go for a final mixing.
4. Refrigerate it almost for 30-40 minutes.
5. Take it out and keep it aside.
6. Take a small bowl of oil.
7. Grease your palm and a plate with oil.
8. Now, make meat balls with the help of your palm and fingers.
9. When you are done with the meat balls, refrigerate again.
For Curry
1. Take a pan and allow it to heat. Add cumin seeds into it.
2. When the seeds start spluttering, add in the onions, ginger and garlic paste. Sauté well.
3. Add tomato puree, green chillies, turmeric powder and salt. Mix all the ingredients until everything goes mushy.
4. Add water to keep it soft.
5. Now, lower the flame and add in the koftas.
6. Add beaten yogurt and cover the pan.
7. Once the preparation starts boiling, let it be cooked for 20 minutes.
8. Add mace powder, nutmeg powder, mint and coriander leaves and give it a nice swirl.
For Biryani
1. Take a deep-bottomed pan and grease it with ghee.
2. Now, make a layer of rice and place kofta curry on it.
3. Cover it with another layer of rice.
4. Add kewra water, saffron and yellow food colour.
5. Keep it on high flame for 7-8 minutes and then lower the heat and allow it to be cooked in steam (dum) for 10 minutes.
